Vegan/Gluten-Free Spicy Noodle Soup

Ingredients

  • 1 whole turnip
  • 6-8 shiitake mushrooms
  • 3 stems bok choy
  • 2 large stems kale
  • 2 carrots
  • 1 medium fennel
  • 4 stems green onions
  • 1 whole yellow onion
  • 1/2 block extra firm tofu
  • 1 tbsp garlic chili sauce
  • 1 tbsp minced garlic
  • 1 tbsp Better Than Bouillon vegan chick'n stock (sold in a small jar)
  • 1/2 box Thai Kitchen thin rice noodles

Directions

  1. 1. Add 5 cups water to large pot and reach a medium-high boil. Add in garlic chili sauce and minced garlic. Boil until soup base is to your liking. Chop/mince up all vegetable ingredients and add them to soup base. Boil on medium/high for about 10 minutes. Add in tofu and noodles. Boil on medium for 7-10 minutes. Add salt and pepper to liking. Scoop out noodles first and serve with tofu/vegetables on top. Enjoy with chopsticks.
