  • 1 tbsp olive oil
  • 2 tbsp fresh herbs

Directions

  1. Slice the pepper. Add the pepper, spinach and olive oil to a frying pan for a few minutes until soft.
  2. Whisk the eggs.
  3. Lower the heat and add the egg mixture to the sautéed vegetables.
  4. Cook until firm and season with sea salt and top with fresh herbs.
