Warm Sausage And Couscous Salad

Ingredients

• olive oil cooking spray
• 6 thick (500g) extra-lean beef sausages
• 1 cup couscous
• 1 cup boiling water
• 125g can chickpeas, drained, rinsed
• 1 red capsicum, cut into 1cm pieces
• 1 small red onion, halved, thinly sliced
• 1 cup fresh flat-leaf parsley leaves
• 1/2 cup raisins
• 1/4 cup olive oil
• 1/4 cup lemon juice
• 1 garlic clove, crushed
• 1 teaspoon ground cumin, (see note)
