Wok Black Pepper Lamb

Ingredients

  • 2 tbsp sunflower oil
  • 1 knob ginger
  • 2 spring onions
  • 1 red chilli
  • 10 green beans
  • 300g lamb
  • 1tbsp light soy sauce
  • 2 tbsp shaxoling wine
  • 1/2 tbsp corn flour
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1 tsp cracked black pepper
  • 2 tbsp oyster sauce
  • 50ml chicken stock

Directions

  1. Prep all as will cook quickly
  2. Finely match stick the ginger and spring onions
  3. Chop red chilli
  4. Top the green beans and cut into 3cm
  5. Bland for 2 mins then cool in cold water
  6. Slice lamb into 2cm rough chunks. Mix in bowl with soy and wine.
  7. Massage into meat and coat with cornflour
  8. Mix the sauce ingredients
  9. Build wok circle with lamb on top
  10. Heat 1 tbsp oil in wok or big frying pan until smoking and add lamb. Stir fry for 1 min to sear
  11. Remove meat and set aside. Clean pan and add oil until high heat. Add ginger, half of spring onion and chilli. Stir fry for 1 min
  12. Push to side of dish and fry beans for 1 mins mixing all together
  13. Add lamb and bring to high boil and stir fry for one minute
  14. Cover with rest of onions and serve
