Ingredients

  • 70 g smoked duck breast, minced
  • 57g dried scallop
  • 57 g dried shrimp
  • 70 g garlic, finely chopped
  • 70 g ginger, finely chopped
  • 3 shallots, minced
  • 10 g shaoxing
  • Water to soak dried seafood
  • 2 tbsp Tare / soya sauce
  • 1 tbsp oyster sauce
  • 1 tsp Lao gan ma Chilli

Directions

  1. Soak dried seafood in water and shao xing
  2. Strain and reserve liquid
  3. Mince dried seafood and add to aromatics
  4. Heat up oil (med high heat) in frying pan, brown duck breast
  5. Reduce heat an add in seafood mix and Chilli
  6. Add in Tare, oyster sauce and some soaking water
  7. Reduce
  8. Cook on low heat for 45 min, stir occasionally
