Ingredients

  • 1/4 cup olive oil
  • 1 cup flour
  • 1/2 cup cornmeal
  • 1tsp salt
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1 cup grated parmigiana, divided
  • 2 eggs
  • 2/3 cup milk
  • 2 small zucchini, thinly sliced
  • 1-2 Tbs fresh, chopped herbs (basil, oregano, rosemary)
  • 1 cup nuts-pine nuts, walnuts, pepitas

Directions

  1. Heat oven to 425’. Line a baking sheet with parchment paper.
  2. Mix flour, cornmeal, baking soda, baking powder, salt, and 1/2 cup parmigiana.
  3. Combine eggs and milk and add to dry ingredients. Mix well then fold in nuts, zucchini, and herbs.
  4. Spread batter onto baking sheet. Sprinkle with remaining parmigiana. Bake on top rack of oven for 35-40 minutes. Cool on wire rack.
