Zucchini Smoked Salmon Roll Ups

Ingredients

  • 2 zucchini’s sliced thinly of use peeler
  • 1⁄2 cup low fat cream cheese
  • 1 tbsp. lemon pepper spice
  • T tsp chopped dill (about 1 stalk)
  • 300 grams smoke salmon – cut into strips the same width as zucchini
  • Instructions
  • Use a peeler to thinly slice zucchini. Mix low fat cream cheese, lemon pepper and dill together.
  • Lay 2 slices of zucchini down overlapping each other. Lay the smoked salmon on top.
  • Place a tsp of cream cheese mixture into salmon and add another teaspoon on the end of the zucchini mixture. This will hold the roll together.
  • Roll up and enjoy!
