Joe Wicks’ Cheesy Chicken With Garlic & Chives

Ingredients

  • 1 tsp butter
  • Large handful of kale, stalks removed
  • 2 cloves garlic, finely chopped
  • 1x 240g Chicken breast, sliced into 1 cm strips
  • 30g mascarpone
  • 10g grated Parmesan
  • Handful of chives, finely chopped
  • Handful of parsley, finely chopped
  • Juice of 1 lemon

Directions

  1. Melt the butter in a large frying pan over a medium heat. When bubbling, fro in the kale and cook for about 4 minutes, the kale should breakdown and become nice and tender.
  2. Crank up the heat and add the garlic and chicken. Stir fry for about 4 minutes, by which time the chicken should be cooked.
  3. Pour on a bout 2 tablespoons of water and reduce the heat to medium. Dollop in the mascarpone and, using a wooden spoon, stir gently as it melts.
  4. When the mascarpone has become a creamy sauce, bring it back to the boil and stir in the grated Parmesan.
  5. Remove the pan from the heat and stir through the chopped herbs, before serving up with a good Squeeze of lemon juice
