Joe Wicks’ Super Speedy Beef Stroganoff

Ingredients

  • 2 teaspoons coconut oil
  • 2 Shallotte’s, finally sliced
  • Five Chestnut mushrooms, roughly chopped
  • 300 g fillets steak, cut into 1 cm thick strips
  • Salt and pepper
  • 2 teaspoons smoked paprika
  • 75 mL beef stock
  • 125 mL sour cream,
  • 1/2 bunch of parsley, leaves only, roughly chopped
  • Juice of one lemon

Directions

  1. Melt the coconut oil in a frying pan over a high heat. Add the Shalott‘s and mushrooms and fry, stirring regularly, for 2 to 3 minutes or until the Shalott‘s have softened and the mushrooms have taken on a little colour
  2. Add the beef, along with a generous pinch of both salt and pepper, and stirfry for 1 to 2 minutes. Sprinkle in the smoked paprika and toss to lightly coat everything with the spice
  3. Poo in the beef stock-it will bubble quickly-then turn the heat right down and stare in the soured cream. Take the pan off the heat, then add the parsley and a generous squeeze of lemon juice
  4. Surf with a big portion of your favourite greens, such as spinach, kale, broccoli, green beans
