Buttermilk Biscuits


  • Pastry Flour - 14lbs 6oz
  • Baking Powder - 9.5oz
  • Salt - 4oz
  • Baking Soda - 3.75oz
  • Butter (melted) - 2 1/2 lbs
  • Buttermilk - 1 1/2 gals
  • Canola Oil - 1/2lb


Melt Butter on Stove Top
Sift together all dry ingredients into a large lexan
In a large Stainless Bowl
put buttermilk and slowly add melted butter stirring by hand to create lumpy texture
add liquid to dry mix and mix by hand until incorperated DO NOT OVERMIX
Divide into 2 sheet pans lined with parchment and greased edges
Pat down even
Use accordian divider score dough 7x9
Brush with Melted Butter
Using bench scraper, precut dough, dipping scraper in melted butter as you go
Bake on 375* for 25minutes
Turn pans at 13 minutes
Cool, cover , and date
