Aidells Chicken Gumbo

Ingredients

• 1 c peanut oil
• 1 c all purpose flour
• 3 medium onions, chopped
• 4 stalks celery, chopped
• 1 green bell pepper, chopped
• 1 red bell pepper, chopped
• 1 1/2 packages Aidells Cajun-Style Andouille Sausage
• 1 t dried thyme
• 1/2 t dried sage
• 1 t freshly ground pepper
• 1 T Gumbo filé spice
• 2 cloves garlic, finely chopped
• 6 c chicken stock or broth
• 1 lb okra
• 2 lb cooked chicken, cut into 3/4 inch pieces
• 1 bunch green onions, thinly sliced
• salt, pepper and hot sauce to taste
• 3 c cooked white rice
• 1/4 c parsley, chopped
