Asian Fried Rice

Ingredients

  • 102g raw eggs (2)
  • 1 x 125g brown rice & quinoa, heat & serve quick cup
  • 55g green beans, chopped
  • 27g carrot, finely chopped or grated
  • 30g red onion, diced
  • 60g baby bok Choy or spinach, finely chopped
  • 3ml Olive oil
  • 3g sesame seeds
  • 50g celery stalk, finely chopped

Directions

  1. Place eggs in a pot of water and bring to the boil. Let eggs boil in water for 5-8 minutes. Remove and place in cold water immediately. When cooled, peel and cut into quarters.
  2. Meanwhile, cook rice & quinoa according to packet instructions. Remove and place in serving bowl.
  3. Add eggs, green beans, carrot, onion, Bok Choy or spinach to bowl. Drizzle with olive oil and toss to mix.
  4. Sprinkle sesame seeds on top to serve.
