Place eggs in a pot of water and bring to the boil. Let eggs boil in water for 5-8 minutes. Remove and place in cold water immediately. When cooled, peel and cut into quarters.
Meanwhile, cook rice & quinoa according to packet instructions. Remove and place in serving bowl.
Add eggs, green beans, carrot, onion, Bok Choy or spinach to bowl. Drizzle with olive oil and toss to mix.
