Au Jue

Ingredients

  • 4 tablespoons butter (or drippings from beef roast)
  • 1 tablespoon all-purpose flour
  • ½ cup red wine
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon spicy brown mustard
  • ½ teaspoon salt (add more, to taste)
  • freshly ground pepper to taste

Directions

  1. Make roux: Add butter (or beef drippings, if using) to sauce pan and heat over medium-high heat. Add flour and stir with a whisk to combine. Allow to cook for several minutes to slightly brown the flour.
  2. Add wine: Pour wine into pan, whisk to combine, and allow to cook for 1-2 minutes to allow the alcohol to burn off.
  3. Add remaining ingredients: Add remaining ingredients to the pan, stir to combine, and bring to a gentle simmer. Au jus is ready to serve now, or heat can be reduced to low for it to be served later.
