Basic Sourdough

Ingredients

  • 100 g - Active Starter (about 1/2 cup)
  • 350 g Warm Water (1 1/2 cups)
  • 500 g Flour ( about 4 cups)
  • 10 g Salt ( 1/12-2 tsp)

Directions

  1. Step 1: Mix
  2. 1. In a big bowl, mix starter & water first
  3. 2. Add flour & salt
  4. 3. Stir until no dry flour remains
  5. It will look shaggy and slightly sticky
  6. Cover let rest 30 minutes
  7. Step 2: Stretch and Folds
  8. Over the next two hours, every 30 minutes
  9. * Grab one side of the dough
  10. * stretch up
  11. * fold over
  12. * turn bowl and repeat 4 times
  13. Step 3: Bulk ferment

Let the dough sit covered until:

  1. * Puffy
  2. *Slightly domed
  3. *Jiggly when shaken
  4. Usually 4-8 hours
  5. Step 4: Shape
  6. * Lightly flour the counter
  7. * Shape into a tight ball
  8. * let rest 20 minutes
  9. * Shape again gently
  10. Step 5: Final Rise
  11. Option A: room temp 1-2 hours
  12. Option B ( Better flavour) : Fridge overnight
  13. Step 6: Bake
  14. 1. preheat oven to 450F with Dutch oven inside
  15. 2. Place dough on parchment paper
  16. 3. Score the top
  17. 4. Back cover 20-25 minutes
  18. 5. Uncover and bake 20-25 minutes until golden brown
  19. Cool at least 1 hour before slicing
