Ingredients

  • 2 x eggs
  • 160g caster sugar
  • 1 tsp vanilla extract
  • 6 drops almond essence
  • 250g plain flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 100g natural shelled almonds
  • 150g dark chocolate chips

Directions

  1. Preheat oven to 180°C.
  2. Line two baking sheets.
  3. Whisk egg and sugar with electric whisk until moussily thick, then beat in vanilla extract and almond essence.
  4. Fold in flour, baking powder and salt.
  5. Fold in almonds and chocolate chips.
  6. Form into 25 cm x 5 cm loaf-like log, and place on one of the baking parchment on baking sheet.
  7. Bake for 25 minutes.
  8. Leave to cool for 5 minutes, then cut into 1 cm thick pieces. Once cut up you may need more than one baking sheet.
  9. Bake for further 10 minutes.
  10. Turn over, and bake for final 5 minutes.
