Blueberry Scones

Ingredients

  • 3 cups almond flour
  • 1 tsp baking soda
  • 1/2 tsp salt (a little less)
  • 1/2 cup shredded coconut (cut up a little smaller)
  • 3/4 cups blueberries (fresh or frozen)
  • 1/2 tsp vanilla extract
  • dash of almond extract
  • 1/4 tsp cinnamon
  • 3 Tbs butter, melted
  • 2 eggs
  • 1/4 cup honey

Directions

  1. Preheat oven to 350 & line a baking sheet with parchment paper.
  2. In a medium bowl, mix together almond flour, salt, baking soda, shredded coconut & cinnamon.
  3. In a small bowl, mix together eggs, butter, vanilla extract & almond extract.
  4. Mix the wet and dry ingredients together to form a dough.
  5. Gently fold in blueberries.
  6. Sprinkle almond flour on the counter & form the dough into a pizza shape.
  7. Cut into 8 slices.
  8. Places scones on the lined baking sheet.
  9. Bake for 12 minutes or until lightly golden
