Breakfast Casserole

Ingredients

  • 24 eggs
  • 1 lb cooked breakfast sausage
  • 1 lb cooked bacon cut into pieces
  • 1 lb cottage cheese
  • 2 bunches green onions chopped (greens included)
  • 1/2 lb cheddar cheese
  • 1/2 lb jack cheese
  • 1 cube melted butter
  • Salt and pepper

Directions

  1. Preheat oven to 350. Bake 30-40 minutes, or until knife inserted in center comes out clean.
  2. Cook and crumble sausage, drain sausage and blot grease out with paper towel
  3. Cut sliced bacon into pieces and brown, drain and blot grease
  4. Chop green onions including the greens
  5. Whisk eggs until creamy add a little water
  6. Mix cooked sausage, bacon, chopped green onions, cottage cheese, cheddar and jack cheese add whisked eggs and melted butter.
  7. Pour into casserole dish
