Cheese Straws

Ingredients

  • 10 oz sharp cheddar, finely grated,
  • 2 1/3 C + 1 T sifted flour,
  • 1/2 t cayenne pepper
  • Scant 1/4 t salt
  • 1/2 lb butter, well chilled

Directions

  1. Keep grated cheese cold in refrigerator. Stir together flour, salt, cayenne in large bowl. Blend in butter with pastry cutter until it is like coarse crumbs.
  2. Blend in cheese with fingers until well mixed. Roll out 1/4" thick. Cut in 1/2" strips, about 4" long. Bake at 375 degrees for 10-12 min. Do not overbrown. Cool on paper towels. Makes 10 1/2 dozen. Mimi's recipe!💕
