Rinse strawberries, cut around and remove tops. Clean out the insides (mostly the white part) with a paring knife. Cut the bottoms just a bit so they stand up straight on a plate. Prep all strawberries and set aside.
In a mixing bowl beat the cream cheese, powdered sugar and vanilla extract until creamy. Add the mixture to a piping bag or Ziploc bag with the corner snipped off. Fill strawberries with the cheesecake mixture. Once the strawberries are filled, dip the tops in graham cracker crumbs. (NOTE: If you have kids, this is really fun for them! Put 3-4 graham crackers in a Ziploc bag and let them have at it with a mallet!)
Note: You can serve immediately, but I recommend letting them chill for a bit so the cheesecake has a chance to solidify. The mixture is a bit warm and creamy when filling the strawberries and they are much better chilled!
