Ingredients

  • 1 tbs of extra virgin olive oil
  • 2 lbs of chicken thighs
  • ½ onion, peeled and chopped (approximately, 3/4 cup)
  • 2 garlic cloves, peeled and minced
  • 1 cup of chicken broth (or use water)
  • 16 oz can of tomato sauce
  • 2 dried bay leaves
  • 2 cups of potatoes, peeled and cut into 1 inch cubes
  • 1 carrot, peeled and chopped
  • 1 red bell pepper, ribs and seeds removed (approximately 1 cup)
  • 1 green bell pepper, ribs and seed removed (approximately 1 cup)
  • 1 8 oz of a can of pineapple, juices reserved
  • 1 tbs of sugar
  • salt and pepper to taste
