Chili

Ingredients

  • 6.5 lbs. ground meat (hamburger, pork, chicken, turkey)
  • 10 Italian sausage
  • 44+ oz. of frozen corn
  • 128+ oz. dark red kidney beans (8-16 oz. cans)
  • 2-27 oz. cans of chili beans
  • A variety of additional types of beans (black, pinto, northern, etc.)
  • 30 oz. Rotel diced tomatoes. Mild or hot to taste
  • 60+ oz. tomato sauce
  • Chili seasoning of choice. Probable several packages is using pre packaged.
  • 1 medium to large onion
  • Celery, carrots, jalapeno, bell peppers, green onions are optional
  • 27+ oz. mushrooms
  • Optional- Add 2 lbs. 1/2 inch cube meat, bacon, potatoes, beef broth
  • Seasonings for chili: 1 tsp. salt, 1/4 tsp. pepper, 1 1/2 tbsp. cumin, paprika, 1 tbsp. garlic powder, coriander, 1/2 tsp. oregano, thyme, 1 tbsp. cayenne, Italian seasoning.

Directions

  1. Cook sausage and ground meat about 80% done. Same with cubed meat if used as a option. Set aside. Place all other ingredients into large pot or cooker and cook on medium for about an hour or so. Cut sausage up into desired size and add to ground meat. Add meat mixture to the cooker and continue to cook about 3 or 4 hours on low. (200 or 250 degrees). Garnish with cheese, sour cream, chili crackers, bread.
