1. In a food processor, chop the tomatoes (couple of batches).
2. In the food processor roughly chop the capsicum and add to the pot.
3. Add all the ingredients to a boiler. Bring to the boil then high simmer for several hours until the mixture is a “jam’ like consistency (about 3+ hours).
4. Bottle in sterilised jars for later use. Doesn’t need refrigeration until opened.
