Chilli Jam

Ingredients

  • 2kg tomatoes
  • 1 large red capsicum
  • 2 1/4 c sugar
  • 1/4 c lemon juice
  • 1/3c c white vinegar
  • 6 really HOT red chillies (or less if you don’t like it hot) OR 2 heaped T sambal oelek.
  • 1T minced ginger (or fresh)
  • 2 T minced garlic (or fresh)
  • 2 T fish sauce
  • 1 t salt

Directions

  1. 1. Chop the tomatoes roughly and add to large pot/boiler.
  2. 2. Chop the capsicum into about 1cm square pieces and add to the pot.
  3. 3. Add all the other ingredients. Bring to the boil then high simmer for several hours until the mixture is a “jam’ like consistency (about 3+ hours).
  4. 4. Blitz the mix to thicken a little more.
  5. 4. Bottle in sterilised jars for later use. Doesn’t need refrigeration until opened.
