Chimichurri Sauce

Ingredients

  • 1 Cup Fresh Parsley
  • 1 Cup Fresh Oregano
  • 6-8 Garlic Cloves
  • ¾ Cup Olive Oil
  • ¼ Cup Red Wine Vinegar
  • 1 Shallot
  • Salt to taste
  • Optional - 1 Jalapeño
  • Optional - juice of 1/2 or 1 lime
  • Optional - 1/2 t pepper flakes

Directions

  1. Combine the Shallot, Garlic and jalapeño (optional) in a food processor and pulse until coarsely chopped.
  2. Add Parsley, Oregano, Vinegar and ½ of the Olive Oil and process.
  3. Add the other ½ of the Olive Oil while processing
  4. Season with salt and pepper.
