Ingredients

  • 2 pounds lean ground beef
  • 1 small yellow onion, minced (minced)
  • 2 garlic cloves, minced
  • coarse salt and freshly ground black pepper
  • 1/4 cup chili powder
  • 1/2 teaspoon cayenne
  • 1 teaspoon ground cumin
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1 (28 ounce) can crushed tomatoes
  • 1/2 cup water (preferably bottled)
  • 1 Bay Leaf
  • 1 teaspoon unsweetened cocoa powder
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons sherry or red wine vinegar
  • 1 pound spaghetti, for serving
  • For the Garnish:
  • 1 can kidney beans (drained and rinsed)
  • 1 small yellow onion (minced)
  • 2 - 3 cups finely shredded extra sharp cheddar cheese
