  • 1 tsp baking powder
  • Pinch of Sea Salt
  • Pinch of Paprika
  • Pinch of Nutmeg
  • Pinch of Ground Pepper
  • Sprinkle of Chilli flakes
  • 1/2 cup + 1tbsp soy milk
  • 1/3 cup creamed corn
  • 1/3 cup corn kernels
  • 1/2tbsp oil
  • 1/3 cup zucchini, grated
  • 10g sundried tomatoes (no oil)
  • To Serve:
  • Onion relish
  • Avocado
  • Rocket
  • Tomato
  • Balsamic vinegar

Directions

  1. Place dry ingredients in a bowl and combine.
  2. Next add the wet ingredients, followed by the corn and zucchini. Stirring as adding.
  3. Pour into pancake sized portions onto a frypan.
  4. Serve with avocado, coriander, tomato, balsamic vinegar, rocket and onion relish.
