Ingredients

  • 3 tablespoons brown sugar
  • 3 tablespoons butter
  • 3 medium bananas
  • 3 tablespoons orange juice
  • 2 tablespoons dark rum
  • Grated rind of half lemon and half orange

Directions

  1. In a broad, shallow microwave dish place sugar, juice and butter.
  2. Cover and cook on high for 1.5 to 2 minutes to melt butter and sugar.
  3. Stir well and add rind and rum.
  4. Cut bananas in half cross-wise and length-wise.
  5. Place in hot liquid, turning to coat them, then cook for a further 1.5 minutes until hot, but firm.
  6. Serve with vanilla ice cream.
