Country Garden Tortellini

Ingredients

  • 2 (9 oz) packages fresh, cheese filled Tortellini
  • 1 cup sliced carrot
  • 1 cup cherry tomato, halved
  • 1 (8 oz) package frozen asparagus spears, thawed and cut into 1-inch pieces
  • 1 (6 oz) package frozen snow pea pods, thawed
  • 2/3 cup sliced radishes
  • 1 small purple onion, thinly sliced and separated into rings
  • 3 Tbs water
  • 2 Tbs lemon juice
  • 2 Tbs olive oil
  • 1 tsp dried whole basil
  • 1/2 tsp pepper
  • 1/4 tsp salt

Directions

  1. Cook tortellini according to package directions, omitting salt and fat; drain. Rinse with cold water, drain well and set aside. Arrange carrots into vegetable steamer over boiling water. Cover and steam for 3-5 minutes or until crisp-tender. Combine tortellini, carrot, tomato, asparagus, pea pods, radishes and onion in a large bowl. Combine water and remaining ingredients; stir well. Pour over tortellini mixture and toss gently. Cover and chill.
