Crunchy Detox Salad
Ingredients
- 2 cups chopped cauliflower
- 2 cups chopped broccoli
- 1 cup chopped red cabbage
- 1 cup chopped carrots
- 1.5 cups chopped fresh parsley
- 2 chopped celery stalks
- 1/2 cup chopped raw almonds
- 1/2 cup raw sunflower seeds
- 1/3 cup organic raisins
- Vinaigrette:
- 3 Tbsp olive oil
- 1/2 cup lemon juice
- 1 Tbsp grated fresh ginger
- 2 Tbsp clover honey
- 1/2 tsp sea salt
Directions
Make Dressing: Combine vinaigrette ingredients in a jar; shake well.
Prep Veggies: Rinse, pat dry, and chop all vegetables.
Chop Nuts: Coarsely chop almonds.
Mix Salad: Toss chopped veggies, nuts, and raisins in a bowl.
Dress & Chill: Add vinaigrette, toss, and chill before serving.
