Ingredients

  • 50g butter
  • 1 onion, sliced
  • 2 potatoes, diced
  • 2 tablespoons curry powder
  • 1 tablespoon lemon juice
  • 1 tablespoon standard plain flour
  • Salt and pepper
  • 1 cup water
  • 3 or 4 cups chopped or sliced vegetables (suggest carrots, beans, capsicum, courgettes, mushrooms, celery, broccoli and cauliflower)

Directions

  1. Melt butter in large saucepan.
  2. Cook onion and potato gently for 5 minutes, stirring frequently.
  3. Add curry powder, lemon juice, flour, salt and pepper to taste and cook for 1 minute.
  4. Add water and remaining vegetables.
  5. Cover and summer gently for 5 to 8 minutes or until vegetables are tender.
