Curry and Olive Oil Roasted Cauliflower

Ingredients

  • 1 head cauliflower
  • 2 Tbsp olive oil
  • 2 Tbsp curry powder
  • 2 tsp salt
  • 1 tsp pepper
  • 1 cup Olive My Pickle Muffuletta Mix

Directions

  1. Preheat oven to 350 degrees.
  2. Break cauliflower into bite sized florets and place in a large mixing bowl.
  3. Toss cauliflower with olive oil, curry powder, salt and pepper.
  4. Place on a sheet tray lined with parchment paper and bake for 17-20 minutes.
  5. Transfer cauliflower to serving dish and mix in the Olive Muffuletta Mix and feta cheese.
