Deviled Eggs

Ingredients

  • 1 dozen large eggs
  • 3 bacon slices
  • 1/2 cup mayonnaise
  • 2 tbsp fresh chives
  • 2 tsp Dijon mustard
  • 1/2 tsp smoked paprika
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper

Directions

  1. In BBQ, Prepare a water smoker for light heat 200 to 250 degrees add wood for smoky flavor.
  2. Place eggs in one layer cover with 1 in water place on stove until boil.
  3. Let stand for 15 min
  4. Drain eggs, run cold water over them until cool to the touch . Then peel and place in a disposable foil pan.
  5. Fry bacon in a pan until crisp 7 to 10 min turning occasionally. Transfer to paper to drain, then crumble and leave aside .
  6. Smoke the eggs in indirect heat with lid closed for 45 min. Turning occasionally to flavor evenly.
  7. Remove and place in the fridge for 30 min
  8. Cut the eggs in half lengthwise
  9. Remove the yolk and place into a bowl.
  10. Mash yolk with fork, mixing all the other ingredients.
  11. Scoop a spoon of the mixtures into the egg whites and garnish with bacon and a pinch of paprika. Serve immediately or cover and refrigerate.
