Earls Hunan Kung Pao

Ingredients

  • 1½ lb fresh Chinese egg noodles
  • 2 tbsp vegetable oil, divided
  • 2 bird's eye chilies, or to taste
  • 8 oz. diced chicken breast or thigh
  • 1/2 cup diced red onion
  • 1/2 cup diced red pepper
  • 1/2 cup diagonally cut carrots, sliced 1/8 inch thick
  • 1/2 cup diagonally cut celery, cut 1/4-inch thick
  • 2 cups chopped yu choy, cut 1-inch thick
  • Hunan Sauce:
  • 1/2 cup soy sauce
  • 1/2 cup chicken stock
  • 2 tbsp brown sugar
  • 2 tbsp minced ginger
  • 2 tbsp minced garlic
  • 2 tbsp rice vinegar
  • 1 tbsp sesame oil
  • 1 tbsp cornstarch
  • Garnish:
  • 1/4 cup roasted peanuts
