  • 1lb ground beef
  • 8oz can tomato sauce
  • 3/4 cups chopped green pepper
  • 1 can kidney beans, drained
  • 1/2 lb velveeta mexican cheese, mild clubbed
  • 8 6” tortillas
  • Oil
  • 1/2 chopped tomato

Directions

  1. Brown meat, drain. Add tomato sauce and 1/2 cup of peppers. Cook over med heat 5 min, stir occasionally.
  2. Add beans and 1/4 lb cheese. Cook until cheese is melted.
  3. Dip tortillas in hot oil, drain. Fill shells with mixture and roll up. Place seam side down in 12x8 dish; top with rest of meat mix, cover bake at 350 degrees for 20 min.
  4. Then top with rest of cheese and bake uncovered 5-8 min to melt cheese. Top with rest of peppers and tomatoes.
