Fiesta Tilapia

Ingredients

  • 1/4 cup garlic
  • 1 bell pepper ( or 5-7 jalapeños seeded and minced)
  • 2 Roma tomatoes, chopped
  • 1/2 cup red or Spanish onion
  • 1/3 cup cilantro
  • 1tsp salt & pepper
  • 1/4 cup olive oil
  • 4-7oz tilapia fillets ( Kirkland brand frozen better than Kroger)
  • 1 tbs pepper
  • 1/2 tbs kosher salt
  • 6 Tbs fresh lime or lemon juice

Directions

  1. Thaw
  2. Combine first 7 ingredients in bowl
  3. Rinse fillets in cold water and ranch in baking pan (don't allow to touch)
  4. Sprinkle with additional salt and pepper
  5. Spoon moisture over fillets and drizzle with lime juice
  6. Bake at 350 covered with foil for 18-25 min until fish flakes easily
  7. Serve with saffron rice or quinoa
