Unfold the puff pastry and cut it into 12 squares, each approximately 8 cm x 8 cm.
For each square, using a knife, cut a diagonal line of 1 cm near each corner. Then connect the cut stripe to the nearby corner. Repeat this for all four corners. Next, fold one corner toward the centre, aligning it with the middle of the adjacent diagonal. Fold the next corner to overlap the previous fold. Continue with the third corner, and tuck the final corner under the diagonal to secure it, forming a shape that resembles a four-pointed star.
Arrange the prepared pastry squares on a baking tray lined with parchment paper. Fill each centre with goat cheese and place a sliced fig half on top. Brush with egg wash and bake for 10-12 minutes, or until golden brown.
Drizzle with honey, sprinkle with thyme leaves, and enjoy!
