Ginger Crinkles

Ingredients

  • 2/3 C canola oil
  • 1 C sugar
  • 1 egg
  • 1/4 C molasses ( not blackstrap)
  • 2C + 2 to 3 tbs flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ginger
  • extra sugar for rolling

Directions

  1. mix oil and sugar thoroughly.
  2. Add egg and beat well.
  3. Stir in molasses.
  4. Stir dry ingredients together and add.
  5. Chill 2-3 hours.
  6. Roll in 1 to 1 1/2 inch balls.
  7. Roll in granulated sugar.
  8. Bake at 300F on un-greased baking sheet 3" apart for approx. 20 min for 1 " balls. longer for the 1 1/2 " balls.
  9. (if your oven is slow, you may have to increase the temp or they take forever.)
