  • 500g Desiree potatoes (washed but not peeled)
  • 1 egg
  • 125g SR flour
  • Punch of salt

Directions

  1. Place potatoes in a pot of cold water, bring to the boil and simmer until cooked.
  2. Strain and peel while still hot.
  3. Mash potatoes until smooth
  4. Add flour, salt and egg.
  5. Mix gently until just combined and dough is slightly springy.
  6. Roll/cut up etc.
  7. Then cook in a large pot of boiling salted water.
  8. Cooked when they float to the top.
