Hawaiian Wedding Cake

Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 2 tsp baking soda
  • 2 eggs, lightly beaten
  • 1 can (20 oz) crushed pineapple with juice (do not drain)
  • 1 cup walnuts, coarsely chopped
  • 1/2 cup butter, soft
  • 1 cup coconut
  • Frosting
  • 4 oz cream cheese, soft
  • 2 cups powder sugar
  • 1 tsp vanilla

Directions

  1. Mix flour, sugar, baking soda, eggs, pineapple, coconut, and walnuts with a wooden spoon until moist. Pour into a 13X9 greased pan. Bake at 325 degrees for 35-40 minutes.
  2. Beat the cream cheese and vanilla. Beat in the powder sugar and vanilla. Spread over the cake.
