Prepare Italian spiced pork tenderloin with cauliflower according to recipe instructions below
Preheat oven to 180C. Line a baking tray with baking paper.
In a baking dish or an airtight bag, add the Italian seasoning, pepper and lemon juice and mix to combine.
Add the pork and rub to coat in the marinade. Allow to marinate for at least 1 hour in the fridge.
Place the marinated pork on one half of the tray. On the other half, add the cauliflower. Drizzle over the oil and toss to coat evenly. Season.
Bake in the oven for 20 minutes. Remove once the meat reaches an internal temperature of 60C for medium to rare. If you prefer medium to well, cook to 70C internal temperature.
Slice the pork at a slight angle. Divide the meat and cauliflower between two serving plates and enjoy.
