Italian Style Omelette

Ingredients

  • 2 eggs
  • 2 tomato, diced
  • 2 tbsp fresh basil, chopped
  • 1 tbsp water
  • 1 tsp minced garlic
  • 1/4 cup mozzarella cheese
  • 1 tsp extra virgin olive oil
  • 1 tbsp lite milk

Directions

  1. Wash and chop the tomatoes. Add to a fry pan with garlic and sauté for 3-5 minutes in olive oil.
  2. Prepare the egg mixture in a bowl by beating together the eggs, milk, water, salt and pepper.
  3. Heat a non-stick pan on medium heat. Brush with oil and immediately pour the egg mixture in to evenly cover the bottom of the pan.
  4. Fold the omelette in half and gently slide it onto a plate.
  5. Serve right away.
  6. As the eggs start cooking sprinkle the mozzarella cheese, add the tomatoes and shredded basil.
  7. Cooking should take 2 minutes.
