Mango, Cucumber and Red Pepper Quinoa Salad

Ingredients

  • 1 1/2 cups water
  • 3/4 cup quinoa seeds
  • 3/4 cup thinly sliced or diced mangoes
  • 3/4 cup thinly sliced or diced cucumber
  • 1/2 cups red bell pepper thinly sliced into lengths
  • 1/3 cup finely chopped toasted salted peanuts
  • 1/4 cup minced red onion
  • 1/4 cup apple cider vinegar
  • 1/4 cup olive oil
  • 2 tsp honey
  • 1 tbsp chopped fresh cilantro
  • pinch of salt

Directions

  1. In medium saucepan bring water and quinoa to boil-cook according to instructions
  2. Place cooked quinoa in medium bowl with mango, cucumber, red bell pepper. peanuts and red onion. In small bowl, whisky together vinegar, oil, honey, and cilantro and slat. Toss dressing with quinoa mix.
