  • • 2 mangoes cut into small pieces
  • • 2 tsp chia seeds
  • • 2-3 tbsp coconut milk
  • • 3 tsp fresh pomegranate juice (optional)

Directions

  1. 1) Soak the chia seeds in double the amount of water for 10 minutes till it swells up and becomes jelly like
  2. 2) Blend the mango to a pulpy puree in a blender
  3. 3) Add the coconut milk to the chia seeds
  4. 4) Add the pomegranate juice to the chia seed and coconut milk. It will become purplish in colour.
  5. 5) Now divide the mango puree and put them in three different glasses or bowls
  6. 6) Add a bit of coconut milk on top
  7. 7) Now add a spoon of chia seed mixture on top
  8. 8) Cool in the refrigerator and serve.
