Mexican Chicken Casserole

Ingredients

  • 1½ pounds chicken breast
  • ½ teaspoon sliced garlic
  • ½ cup chicken stock (or 1 Tb chicken base with water)
  • 10 ounce can tomatoes with green chilies (drained)
  • 2 ounces cream cheese
  • 1 cup pepperjack cheese (shredded)
  • 1 cup monterey jack cheese (shredded)
  • 16 ounce sour cream

Directions

  1. Cook chicken on Forman Grill.
  2. Add stock and sliced garlic to casserole dish.
  3. Shred chicken into casserole dish.
  4. Mix in drained can of tomatoes and green chilies.
  5. Dot chicken / tomato mix with cream cheese.
  6. Layer shredded pepperjack cheese.
  7. Cover with shredded monteray jack cheese.
  8. Bake at 350 degrees for ~35 minutes, until edges are brown.
  9. Drain excess liquid.
  10. Serve with dollop of sour cream.
