Mom's Meatloaf

Ingredients

  • 2lbs beef
  • 1 pkg onion soup mix
  • 1 cup. Instant rice
  • 1-2 Eggs
  • 1can. Tomato soup ( reserve some for top)
  • 4 been peppers, cut in half length wise (remove stem and seeds)
  • Parsley, pepper

Directions

  1. Preheat oven to 350
  2. Put peppers in water, when they come to a boil take them out (parboil)
  3. Mix all ingredients in bowl, adding water to make meat soft and pliable
  4. Form loaf in pan
  5. Put remaining tomato soup on top of loaf
  6. Cook for 45min-1 hour
