Ingredients

  • 1/3 c. Milk
  • 1/3 c. Vegetable oil
  • 1 egg
  • 1 1/2 c. Flour
  • 3/4 c. Sugar
  • 2 t. Baking soda
  • 1/2 t. Salt
  • 3/4 c. Frozen blueberries
  • 1/2 t. Vanilla

Directions

  1. In a large bowl combine all dry ingredients
  2. In a separate bowl combine all wet ingredients
  3. Add the dry ingredients reserving 1 tbsp. of the dry and toss with blueberries
  4. Stir for a count of 10
  5. Add 1/2 c. blueberries to mixture and stir 3 more times an reserve 1/4 c. blueberries
  6. Fill about half full into cupcake liners in muffin pans
  7. Sprinkle the remaining 1/4 blueberries on the top of muffins and pr so down lightly
  8. Place in oven and increase temp to 400
  9. Bake 20-25 minutes
