New York Cheesecake

Ingredients

  • 1 1/4 cups (300 mL) graham cracker crumbs
  • 1/4 cup (50 mL) sugar
  • 1/3 cup (75 mL) butter, melted
  • 4 pkgs (250 g each) cream cheese, softened
  • 1 can (300 mL) Eagle Brand® Regular or Low Fat Sweetened Condensed Milk
  • 4 eggs
  • 1/3 cup (75 mL) all purpose flour
  • 1 tbsp (15 mL) vanilla extract
  • 1/2 tbsp (7.5 mL) grated lemon rind
  • Fresh fruit or berries of choice (or 1 can (19 oz/540 mL) fruit pie filling of choice)

Directions

  1. 1. Combine crumbs, sugar and butter; press firmly onto bottom of 9" (23 cm) springform pan.
  2. 2. Beat cream cheese until fluffy. Gradually beat in sweetened condensed milk until smooth.
  3. 3. Add eggs, flour, vanilla and rind; mix well. Pour into prepared pan.
  4. 4. Bake in preheated 300°F (150°C) oven 1 hour or until lightly browned. Cool thoroughly and chill 4 hours or overnight.
  5. 5. Before serving, top with fresh fruit or chilled pie filling of choice.
