Orzo Pilaf

Ingredients

  • 2 cups fresh mushrooms
  • 1/2 cup chopped onion
  • 2 TBSP oil
  • 3.4 cup water
  • 1/2 cup shredded carrot (1 med)
  • 1/2 tsp dried marjoram
  • 1 1/2 tsp beef boullon
  • 1/8 tsp pepper
  • 2 TBSP fresh parsley

Directions

  1. Cook mushrooms and onion until tender.
  2. Stir in orzo, cook and stir 3 minutes until lightly browned. Remove from heat. Carefully stir in water, carrot, marjoram, bouillon, and pepper. Boil, reduce heat. Cover and simmer 15 minutes (tender but firm). Remove from heat, let stand 5 min, then stir in parsley.
