Paleo Chocolate Nut Bars

Ingredients

  • 6 TBSP coconut oil
  • 3 TBSP raw honey
  • 1/2 cup unsweetened cocoa powder
  • 1 cup crushed mixed nuts (I like almonds & macadamia)
  • 1 cup dried berries (like raisins or cranberries)
  • 1-1/2 cups unsweetened shredded coconut

Directions

  1. Step 1: mix oil & honey in a medium pot and heat on medium until they're melted and mixed well. Bring heat to low and add cocoa. Mix to combine.
  2. Step 2: add nuts, berries & coconut. Mix to combine.
  3. Step 3: line a square pan with parchment paper and pour batter into pan. Press firmly into pan.
  4. Step 4: place in freezer for 30 minutes then cut into squares.
  5. Keep in refrigerator. (I keep them frozen in a plastic bag separated with parchment paper)
