Peel and core pineapple. Finely chop all ingredients starting with the pineapple. Combine the finely chopped pineapple with one half of the red pepper and one half of the red onion. Season with salt and pepper to taste and then add the fresh cilantro leaves that have been washed and finely chopped. This salsa is especially delicious served with grilled chicken breasts, grilled white fish or salmon. Fresh mango or papaya can also be chopped and added. Some of the cilantro can be replaced with fresh mint leaves which have been finely chopped.
