Ingredients

  • 2 eggs yolks
  • 1 clove garlic
  • 1/4 bunch cilantro
  • 1 tbsp lime juice
  • 3 toasted, peeled and seeded poblanos
  • Salt to taste
  • 1/2 cup evoo

Directions

  1. Combine and purée yolks, garlic and cilantro in a food processor. Add lime juice, peppers, and salt to taste. With the motor running, slowly drizzle in the olive oil, gradually adding more until it's the consistency of loose mayonnaise. Season with salt.
